From Nice this is both the reliable choice and the cheapest of the reliable ones. A Lufthansa Group carrier that stays clear of the Gulf, one clean Johannesburg reclaim with a 3 hour buffer. About £20 cheaper than the same routing out of Milan, for a similar train from Genoa.

Set aside for now: the Gulf route

Emirates via Dubai from Nice (about £1,155) would still go through Gulf airspace that is being closed on and off right now, and it is the most expensive option here anyway. Not worth the cancellation risk on a fixed return date. Re-check nearer the time if the region settles.

Nice vs Milan

Roughly a wash. Nice is about £20 cheaper on the reliable Lufthansa or SWISS routing and has a similar train from Genoa. Milan only wins if she wants the rock-bottom price, where its Ethiopian option (around £617) undercuts everything, at the cost of a less punctual airline.

The Johannesburg reclaim

On the way in only: clear South African immigration, collect the bags, re-check them, then the short hop to Durban. Allow 3 hours. Johannesburg to Durban runs roughly hourly, so if the booked connection is tighter, take a slightly later hop. On the way home, Johannesburg is just an airside change, no reclaim.

Getting to Nice

Genoa to Nice by train is about 3h45 (change at Ventimiglia, then the tram to the airport), roughly £19 to £30. If she is on the French Riviera side already, it is shorter. For the evening flight on the 7th, leave in the early afternoon.
